30-DAYS OF INTERIM/REPLACEMENT DINING SERVCES DIRECTOR In the event that a dining services director position is vacant, we will provide 30-days of service free. Additional fees will be charged for interim management past 30-days. 103 POINT FOOD SAFETY AND SANITATION AUDIT: Are foods stored under sanitary conditions? Refuse and pest control Emergency preparedness plan DINING SERVICES FORMS AND LOGS: Dish Machine Temperature Logs Refrigerator and Freezer Temp Logs - for kitchen and remote kitchenette Ice Machine Clean Calendar Chef's Log with taste panel and temp logs OPERATIONS AUDIT AND FIXES: Spend-down: Food; Supplies; Supplements; Labor Cleaning Calendar and Assignment Sheet Audit or Dining Services P& P manual Evaluation of food procurement system - GPO Creation of Monthly Food Forum (Dining Committee) Dining Satisfaction Audit Daily Huddle Plan and structure Patient Allergy and diet Audit Menu review and write support DPH Survey Support - a member of HDC will be present during survey.
